    Here's my take on a traditional Portuguese soup, yummy! DO make a point of using smoked paprika. It makes all the difference.

    Caldo Verde: Kale and Turnip Soup w/Sausage

    Category: Import
    Yield: 8 servings

    1 1/2 pound turnips, peeled and cubed
    1 Tbs bacon fat
    1 lb chicken sausage Chorizo or Andouille
    2 dried chiles - (to 3)
    2 shallots (2 large), finely chopped
    4 cloves garlic (1 to 2 cloves), minced
    3 medium carrots (1 cup), coarsely chopped
    2 quarts chicken broth
    2 bunches kale, trimmed and cut into pieces (1
    -inch)
    1 teaspoon smoked paprika
    1 teaspoon sea salt or to taste
    1 tbs extra virgin olive oil

    Boil turnips until tender. Drain and set aside.
    In same kettle, heat bacon fat over medium heat, add sausage and fry until cooked/heated.
    Add chili peppers, shallots, garlic and carrots and fry w/sausage until they become fragrant and tender.
    Add chicken stock, bring to a simmer, and cook for 20 minutes or so, then add the turnips and continue to cook for another 10 minutes.
    About 5 - 10 minutes before you plan to serve the soup, add kale, paprika and salt. cover with tight fitting lid and allow to rest for about 5 minutes, until kale is wilted.
    Serve with a drizzle of good olive oil stirred into the bowl at the last minute.
