Spicy Chicken, Bean and Rice Bake

    sounds good but the serving is going to be pretty small. Will leave me hungry after im done with it.

    Just made this for lunches this week, it's really tasty!

    500g chicken breast
    1 can red kidney beans, drained & rinsed
    100g dry brown rice
    1 can diced tomatoes
    1 small can green chillies
    1 tbsp chicken stock powder
    1 tsp chilli powder
    75g shredded cheese

    Put all ingredients except the rice and cheese in a large saucepan and boil until the chicken breasts can be shredded. Shred them, add them back to the saucepan and stir in the dry rice. Pour the mix into a lasagna pan and bake @ 180 for 40 mins. Spread the shredded cheese over the top, pop it back in the oven until brown.

    It has a kick!

    6 serves, 250 cal a serve.

    Do you have to cook the rice first?

    Do you have to cook the rice first?

    Nope! There was sufficient liquid in the chicken mix to cook the rice in the oven. If you think too much has boiled off while cooking the chicken, add a bit of water before stirring in the rice. But mine cooked just fine and made a nice dense bake.
