The other day I posted a pic of a meatless baked brown rice and beans southwestern style dish, stating it was meatless for Monday, and I expected to do a chicken addon for Tuesday's leftovers. Well, the family overruled my intention, and I did a ground beef southwestern style for Tuesday to go with the rice (pic below). Today, back to a meatless dish: roasted spaghetti squash with a mushroom-chickpea-tomato sauce (pic below). At the conclusion of tonight's dinner's roast of the squash, I used the hot oven for a whey-enhanced whole wheat molasses loaf of bread (actually 60% whole wheat/40% unbleached bread flour). Also pictured below. Covid lockdown cooking continues with some fresh deliveries. We've been about 50% meatless with dinners these past couple of months, and everyone in the family has lost weight.
I had a steak/spinach/cheese/jalapeno 6" sub and cinnamon squares from a local pizza joint. Not the healthiest but I'm working all night (alone) and not the best of sleep and I'm under my calorie count so yay!
This is a nice vegan dish I made, but could just as easily be non-vegan by adding chicken or cheese. Zoodles, mushrooms, and peas with cauliflower sauce.
Cabbage and veggies, baked. With chicken. Two layers each of the raw cabbage and chicken/veg mix in the casserole. Very tasty, pretty simple, 90 mins from start of prep to service. Lots of veggies, something we've had in variable supply these last couple of months. Good for a rainy day here in coastal NJ. MFP estimates 344 cals, 33g protein, 37g carb, 7g fat per serving. Note: no starchy carbs (rice, potatoes, pasta) or dairy in the baked dish.
