Flavor without the heat - Indian-style Baked Spiced Chicken Thighs (no heat - wife is sensitive to all capsicum recently). Served with sides. Trivia: I've had Indian cooking many places in the US, London, Amsterdam, Canada, but - the BEST I've had, IMHO, which I tried to vaguely honor here, was in Cork, Ireland - savory but not "hot," i.e., complex and layered without a burn. I like heat myself and can always add it at table. A serving of this is pretty good on the macros count as well.
My last meal was a rice and veg bake. Aubergine, corgette, pepper, onion and a tin of chopped tomatoes cooked with spices. Rissoto rice cooked, then mixed with 2 eggs and cheese. Veg goes in casserole dish, topped with the rice and another sprinkle of cheese. So delicious.
