Should I be working through the soreness or rest until I no longer feel sore?
The fat-burning HR zone, long before it got that fad name and status - was called, and still is - the Active Recovery HR zone.
It's enough movement and work to get the blood flowing, help heal - but not enough to put another load on muscles already trying to recovery and repair and rebuild. Hence Active Recovery.
So you don't need to rest, which actually could make it take longer, but easy cardio is fine, or very light weights so that it doesn't even feel like a workout.
Once not sore, then you can hit it hard again.
Oh, many not in cardio shape may find that HR zone so slow for like running or such that they'd rather just walk. I'll jog, but I can't do the bike that slow, well, rarely. But really hard not to push harder on something fun.
