The calories that MFP gives me is way to low at 1380, ive tried not tracking and just eating healthy but when i put it into MFP i noticed i was only eating about 1000 cal, i have also increased my calories and weigh my food but i am still stalled in my weight loss, ive been looking into tracking my macros. I work out atleast 5x per week with about 30-60 min of cardio and about 30-60 min of weight training. I am 5'4 and currently weigh 255. i am not sure which one to go with

MFP gave you 1380 based on your stats and weekly weight loss goal which I suspect was 2lbs a week...and MFP NEAT method expects you will eat back your exercise calories. When using TDEE-15% that is 3/4lb a week so you really need to compare apples to apples.
Tracking macros doesn't help weight loss...being in a calorie deficit does.
If you are stalled...how long have you been stalled? a week or two..eh...weight loss is not linear...but that being said...
It doesn't matter which estimate you go with...they are all estimates and if you are not weighing your food you will continue with the status quo anyway...and by looking at your diary you are not weighing food...or at least not logging it that way.
Inconsistent tracking..days last week not logged, looks like partial days,
It doesn't matter which one you use...if you are not logging consistently and accurately you will never know if you are in a deficit.0
