This is amazing - make ahead in just a few minutes, keep in the fridge, and pour yourself a bowl whenever you want (you eat it cold) - very refreshing on a hot day:
1 English cucumber, peeled and cut into 1-inch chunks
1 cup non-fat plain yogurt
1 chicken bouillon cube (I use the Knorr simply chicken gel-pack)
1 onion, chopped
Dried dill to taste
First, chop the onion, and microwave for about a minute (it would be overwhelming if left raw)
Place the cucumber, onion, yogurt, chicken cube and dill into the blender, and blend until smooth
Refrigerate until needed. Makes 3 bowls of cold soup
Recipe calculator says this is 70 calories a bowl.
