Unexpected FRIDGE CHAOS GOOD RECIPE!!!
Vegan! Healthy! With calorie count...

So I came home from a double shot of cardio (Fridays Zumba & Spin!!!)...
And I came to the fridge and had no idea what to cook. I checked the chickpeas, and they had cooked up nicely (my first attempt!) So then I thought that I'd make them the base... what next? Italian? maybe an un-salad... cold with vegetables? Nothing sounded good.
I knew I needed to add something green... voila... peas... ok
Then I knew I wanted some kind of carbohydrate... quinoa should be good. (It's a grain and I just happened to have some cooked up already.)
seasoning... hm... maybe some ripe tomatoes to make a sauce with some adobo seasoning...
It's missing something...
Oh vegan cheese! Nacho style!
Microwave...
And then add the avocado on top and two lime wedges.
Voila... one of the best lunches I've ever had.
Here's the recipe.
150 grams chickpeas
80 grams peas
1/8 cup quinoa
1 large tomato wedge
1 oz. Vegan Gourmet Cheese Nacho Style
little drizzle e.v.o.oil
sprinkle adobo seasoning, ground pepper, sea salt.
top with cool avocado (1/4)
squeeze the juice from one lime wedge
Calories: 554 Carbs: 74 Fat: 21 Protein: 23 Mon Fat:10 FIBER: 21!!!! :bigsmile:
