Veggie plate recipe

This is a favorite with MOST members of the family (except the one who insists on meat for dinner).

Note: we've only tried this with the Velveeta cheese. I don't know how it will work with other cheeses. The cooking can be done ahead, when the weather is cooler.

Needed: 4-5 of your favorite veggies-in-season (example: parsnips, red potatoes, Brussels sprouts, white onions, and kale), butter, and American cheese.

Prep: Clean veggies (peeling, halving/quartering, etc). Place veggies in separate pots (each veggie will need different cooking times). Cook each veggie till fork-tender.

Place some of each veggie on a microwave-safe plate. Dot with a little butter and place 2-3 slices of cheese on top. Microwave on high just till cheese melts.

    You're welcome! The veggies can be varied for personal preference. Don't like parsnips? Swap it out for cauliflower or broccoli.
