Rice salad recipe?

We have an abundance of rice at home, as well as a soon-coming abundance of little yellow tomatoes. Does anyone have a good simple rice-salad recipe?

    1 can of drained and washed black beans
    1 cup of rice (measured before cooking, used after cooked)
    1 tomato
    some shallots
    some cilantro
    some lime/lemon juice

    mix it all together. Toss some corn if you got it. Enjoy a nice side dish

    Well I made a salad with orzo but you could make it with rice.

    Bunch of scallions
    1 lb of shrimp
    1 cucumber
    4 oz of feta cheese, crumbled
    1/2 cup fresh dill
    8 oz of orzo (or rice)
    3 tablespoons of black olives, chopped
    2 cloves of garlic
    2 Tablespoons of olive oil
    zest of two lemons
    1/2 cup lemon juice

    Chop the shrimp, broil the shrimp for 5 mins with the oil and garlic cloves. While the shrimp is cooking boil the orzo (or rice). When orzo is done, drain and mix with all other ingredients including shrimp and sauce that is in pan from broiling the shrimp.

    The recipe called for 1/3 cup of oil to put over the salad but I just used the two tablespoons that I broiled the shrimp in. It's yummy!

    I had rice, corn, peas, onions in Europe simple and good. At home I mix rice with all kinds of veg. My husband says its more veg then rice. And I like to mix it up with cooked and fresh raw veg. That way you get some crunch in with it. Just play around with it and use your favorites.
