Salmon & Vegetable Pasta Salad

Last night I made a really yummy pasta salad so thought I'd pass it on. My mum thought it looked so good she's planning to make it for dinner sometime soon!

Ingredients for 1 person (obviously serving size can be adjusted depending on your calorie goals)

70g pasta (I used San Remo penne)
1 John West salmon tempter (small 1-serve tin of salmon, comes out to about 57g after draining I think)
200g Bird's Eye Spring Greens vegetable mix (frozen veggie mix of broccoli, beans & peas)
65g low fat cottage cheese

1. Cook the pasta and leave in the fridge for a while to cool.
2. Cook the frozen vegetables however you want (I use the microwave)
3. Drain the salmon and mix in a bowl with the cottage cheese.
4. Mix the vegetables and pasta then mix the salmon/cottage cheese mixture through
5. Refrigerate if you want the vegetables to be cold - I didn't since i was in a hurry and it was fine but YMMV

ENJOY!

Obviously the salmon could be substituted for tuna and a different vegetable mix used or fresh vegetables, I just used what I had in the cupboard.

It was really yummy, very filling and turned out to be a pretty big serve.
