Brussel Sprouts & Onions roasted in Gochujang with a Skyr Gochujang Lime dip.

We went to a noodle house for dinner. I had Tonkotsu Ramen Soup with two kinds of mushrooms added. Chili oil on the side so I could control the heat because unlike my partner I like only a tiny bit of spice. He got a spice bomb for his ramen soup. We also had an appetizer of gyoza but I forgot to take a photo.

Spinach and ricotta ravioli with asparagus and walnuts drizzled in a lemon butter sauce. Caesar salad as the side.

Homemade Chinese takeaway of Gong Bao Ruo, Di San Xian with green pepper replaced by sugar snaps, and sticky rice.

TVP Mince and Green & Red Lentil Chilli with Celeriac Mash, some Mexican Cheddar, Skyr, Red Onion, Spring Onion, Baby Plum Tomatoes and Coriander garnish. Huge bowl of soothing comfort food for less than 430 calories. I actually couldn’t finish it all, sadly!

Playing with the Ninja again. Air broiled grass fed ribeye (medium rare) and air fried fries. I used the usual Primal Kitchen Chili Lime mayo for the fries (not pictured).

Worked from home this morning so lunch was breakfast.2 -
Borrowed a page from my mom's strategy for putting three stir fries on the table every night when I was growing up. Warmed up leftover Di San Xian and Gong Bao Ruo from last night's dinner. New (sort of) stir fry was Indonesian sambal goreng tempeh which we batch cooked dry a few weeks which just needed stir frying in the sauce.

Curried wild boar slider patties. Sides of oven roasted butternut squash (with fresh rosemary) and broccoli. I usually make meat sauce for pasta with the wild boar but wanted to try something different. Durham Ranch had this curried recipe for the meat mixture https://durhamranch.com/2016/10/07/curried-wild-boar-burgers-coconut though we did slider size so we could have an even distribution for four portions. I don't know that I'd make it again but it was pretty good.

Decadent dinner calorie wise. Tempura sea bass and veggies with a side of pickled daikon and rice. Shallow fried after a dip in batter (half self raising flour and half potato starch mixed with cold sparkling water) and then finished later in the air fryer for 10 minutes at 200C.

Black (soy) bean "spaghetti" with chicken, pesto, cherry tomatoes & fresh basil.

Butternut Squash slices masquerading as ‘pizza’.
One is Spinach, Goat’s Cheese & Black Olive. The other Red Pepper, Mushroom and Vegan Mozzarella. There was a big side salad too, a little of which is on the plate. Cooked in the air-fryer - which didn’t work as well as when I’ve done the same in my normal oven. Still tasted good though!

Chicken and asparagus stir fry, smashed cucumber, some warmed up leftover sambal goreng tempeh, basmati rice.

Thursday Brunch - 1/2 Everything bagel with 1/2 small avocado topped with a basted egg
Dinner - salad of green leaf and bibb lettuce, jicama, cucumber and hardboiled egg with a drizzle of Ranch dressing and small bowl of chicken vegetable soup (carrot, celery, onion, green beans, peas, riced cauliflower and blended fire roasted tomatoes)

Beetroot Dahl, Black Rice & Romanesco, a mini fenugreek flatbread and a microwaved Poppadum.

Easy weeknight dinner of minced beef bulgogi beef and rice bowls accompanied by a side of Sichuan blanched courgette salad.

Once again, we didn't have enough room for a nata tart, unfortunately.
