Tried something different today …. Made purple sweet potato gnocchi. Was pretty good.
My mother in law brought over fresh picked herbs from her greenhouse.. which made the sauce really tasty.
Sauce: olive oil, a heap of fresh oregano & thyme, sea salt and a sprinkle of Egyptian nutritional yeast

Dutch herring salad with some air fryer cheese souffles.

Ground turkey and venison porcupine meatballs with riced cauliflower instead of rice.
We had them with fresh string beans last night and using the leftovers for meatball wraps this week.6 -
Online cooking class was french toast with stewed pears, crème chantilly, and a dark chocolate sauce.

I made homemade low calorie mc chickens
Each one is 250 calories which meant I could have 2 with some air fried fries5 -
Hi! I thought I’d share some of the dinners I’ve cooked over the past few weeks!
From top, left to right:
1. steak donburi bowl with a cured egg yolk
2. Baked cod loin marinated in ginger, chilli, garlic, fresh coriander and the zest and juice of a lime, plantain (done in the airfryer) with a pineapple salsa
3. Persian joojeh kabob and sabzi khordan (coriander, parsley, mint, cucumber, spring onion, radishes, pickled pink onions, pomegranate seeds and pistachio) - I made for Persian New Year on Monday
4. Ras-Al-hanout chicken skewers with jewelled couscous and a mint, yogurt and coriander sauce
5. Pork loin Tom Yum Ramen Bowl
6. Sticky Soy roasted aubergines with jasmine rice

Tuesday brunch. Every week to 10 days I get a craving for pancakes/French toast/waffles. (It's obvious what I'm really craving is maple syrup... lol.) Here's my answer to that: Chaffles. [1 large egg, 1/2 cup mozzarella cheese, 1 t almond flour, cinnamon - today I used pumpkin pie spice]. 1/4 cup raspberries, 2 T pure maple syrup

Tuesday dinner: large salad - red leaf lettuce, cucumber, radish, jicama, avocado, cheese and chicken with a drizzle of Ranch dressing

Wednesday brunch: 2 slices peanut butter toast. Dinner: 2 chicken tacos (onion, ancho chili and cumin seasoned chicken, shredded cheese, avocado slices, salsa and a dollop of sour cream on almond flour tortillas heated over an open flame on my gas stove)
