Want to eat more as a vegan

I have been a vegetarian for years but rely a lot on eggs, cheese and quorn. I'd like to eat more in a vegan way as eating eggs and cheese makes me feel very bloated. I know I can eat nuts, lentils, chick peas etc but would love to have a look at people's diaries to see what they do with these- particularly light lunches. Can anyone who think their diaries are suitable, let me know please. Alternatively, I'd love some lunch suggestions.

Hi my diary is open.
For lunches I usually prep at the weekend so I'm prepared for the week, usually a lentil or bean dish (stew/soup/loaf) that I can add veg to or maybe a grain depending how hungry I'm feeling and usually follow with some fruit and nuts. I tend to be hungrier in the day rather than the evening so my lunches are not necessarily light!0 -

One thing I'm realising is that I'm going to have to take a regular trip to a health food shop as my local supermarket doesn't sell half the stuff that people are using.0

I do 95% of my shopping at the grocery store. Pretty much the only things I get at the health food store are things like buckwheat flour that I need for my grain-free baking. The occasional smoked tofu, but pretty much everything else comes from the grocery store.0

I'm in the Uk and in an area where there are very few vegetarians- let alone vegans!!! I can't even get tofu at my local supermarket. Lots of people's diaries seem to contain lots of branded specialised stuff.0

I make a lot of bean dishes, so no need to go to a fancy store. I usually have vegetarian chili for lunch (make a pot and it lasts most fo the week and is cheap).0 -

Hah, even in Toronto, the kind of tofu I like is hard to find. There are 3 grocery stores where I do shopping and they are all out of the firm tofu.
I think I'm going to have to go to the Asian supermarket (far out of my way though) - just for tofu!!
Anyway. Baked tofu. Marinate it in soy sauce and other spices and just bake it. It makes for a great snack!!0
