Healthier Receipes on a Budget

Hey guys, I am back on MFP after taking a LONG break, I am looking to change the way I eat completely for good. I grew up in a meat and potatoes family and to be honest I am pretty burnt out on the same ole' stuff. I am looking for yummy, interesting, creative and budget friendly receipes. I made a new salad for dinner last week... I (majorly) adapted it from this recipe:

It was romaine, cooled pasta (make it a small amount if you're a carb-phobe) with slivered almonds, avocado slices, and shredded chicken. Dressing was a bit of sesame oil, vinegar, honey, and low sodium soy sauce. It was a fairly tasty dressing so I didn't actually use a lot. I find shredding the chicken breast makes it stretch farther... It's like we think we are getting more chicken than we are so that's a budget saver.0 -
