Tomorrow is my sons 3rd birthday. He wants to make/decorate his own cupcakes. He picked out a strawberry boxed cake mix. Im curious if there is a healthier way to make it. I know you can substitute applesauce instead of oil, and Ive heard you can use diet soda (just the diet soda+box cake mix). But im not sure how much soda to use. Would it matter whether it was coke, Dr. Pepper, Sprite, etc? Not sure if the flavor of the soda would bake out or if it would be noticeable..

A little bit of olive oil is not the end of the world - it can actually increase your levels of healthy cholesterol
Prepare as directed and enjoy in moderation. 0 -
prepared as directed will be FINE.
But a diet soda cake does taste good. It's 12 oz of soda for a box of mix, nothing else.
I have used sprite zero with strawberry cake, added fat free cool whip and strawberries, dusted with powdered sugar....200 calories a square. It was so pretty I took a pic:

I agree that if its for your son, then its probably fine to make it according to directions. BUT I have made the diet soda cake and it always turns out good. You can use any flavor you want. I also saw on hungry-girl.com that you can use a cup of plain yogurt and its supposed to be really good, but I haven't tried that yet.0

1 can of diet soda any flavor. W/a strawberry cake I'd probably go sprite or ginger ale. Cool Whip Free or Lite and strawberries on top - YUMMERS!
Here's a site w/some flavor combo ideas & a recipe - says to use egg whites (I never have)

Whenever I make pancakes, I never use oil, eggs or water.... I use Mashed Banana for the binder and Plain Seltzer for the liquid.
The Plain Seltzer makes the absolute fluffiest pancakes ever. Seriously.
So I would imagine that adding any carbonated beverage to the boxed cake mix would yield similar results.0 -
