Delish Zesty Chicken & Rice Recipe - Had to share!
I changed this up from a recipe I found online that used instant rice, refrigerated grilled chicken strips, and cooked on the stovetop. Mine (I think) is much better. My whole family couldn't stop raving about it!
Zesty Chicken & Rice Casserole w/ Roasted Red Peppers
1 ½ c. Uncle Ben's Original Long Grain Rice (6 servings)
3 1/3 c. Chicken Broth (boiling)
13 oz. jar roasted sweet red or yellow peppers in vinegar, chopped
¼ c. halved pitted kalamata olives (optional)
2-3 c. chopped broccoli florets
2/3 c. purchased Italian salad dressing, plus extra for top
2 Tbsp Parsley
Salt & Pepper to taste
4 boneless skinless chicken breasts, thawed
1 c. shredded fresh Parmesan cheese
Mix first 8 ingredients together in a 13 x 9 baking dish. Lay 4 breasts on top of mixture. Pour a little Italian dressing over each. Cook 375 degrees for 50 minutes. Take out of oven and put ¼ c. Parmesan on top of each breast. Return to oven for 15 minutes. Enjoy.
Makes 8 servings. About 420 Calories.

I made this night with some changes. I used leftover rice and a jar of salsa, 12 oz broth, no broccolli, extra red pepper.
Using cooked rice I’ll leave the broth out next time as it was too watery. The salsa gave it a nice kick.
I liked it & my DH (darling husband) said it was so-so. He’s not big on trying new recipes anway.
Didn’t have enouh dressing or broccolli to make it the way described. Will make it this way next time, Thanks.0 -
