Garbanzo Pancakes

Ok, so it's lunch time and i needed a carb to eat for lunch and I was a little sick of rice, to be honest. So I was going to potato pancakes, just not fry them. No potatoes! So I decided let me raid my pantry and see what I have. Garbanzo beans were the first that I grabbed. So i looked up this recipe: http://www.weightwatchers.com/food/rcp/RecipePage.aspx?recipeid=317116240 and modified it for what I actually had. I used lemon juice and cinnamon and stevia in the raw. I had to quickly freeze the rest because they were so good. I also want to let you know they'll be darker than normal pancakes because they're.. not normal pancakes! plus they're supposedly gluten free (I know nothing about gluten)
I put it into the tracker and it was a good carb and partial protein, so I'm feeling really full. I made it my mission to share this recipe!

    I would have never, EVER thought of using chick peas!!!!!! Such a fantastic idea! :) I think I'm going to try this out in the next couple of days. It's perfect because my son is gluten free. I'm keeping my fingers crossed he likes them. :)
