Mmmmona's Crock Pot Chicken Creole
Hey everyone! I just thought I would share this new recipe with you. It's in the database now too. It's low calorie, low sodium and high protein! Enjoy.
Makes one full pot (small crock pot)
Serves 4
Ingredients:
2 lbs boneless skinless chicken thighs, fat trimmed
1 onion
1 garlic clove
1 bell pepper
2 cups diced tomatoes
1/2 teaspoon oregano
1/2 teaspoon cumin
1/4 cup cilantro, chopped
Directions: Throw it all in the pot and cook on high for 4 hours, low for 2 hours.
Facts: (One serving)
Calories 306.3
Calories from Fat 82 (This is probably less because you should trim the excess fat before cooking.)
Total Fat 9.2 g
Saturated Fat 2.3 g
Cholesterol 188.8 mg
Sodium 203.2 mg
Total Carbohydrate 7.8 g
Dietary Fiber 2.1 g
Sugars 4.2 g
Protein 46.1 g
I like to throw it on pasta or rice.

Thanks guys. No, I meant high for 4, low for 2. But its a crock pot, you can cook it however you like. I like it to fall apart so i cook it hard.0
