Hey everyone! I just thought I would share this new recipe with you. It's in the database now too. It's low calorie, low sodium and high protein! Enjoy.

Makes one full pot (small crock pot)

Serves 4

Ingredients:

2 lbs boneless skinless chicken thighs, fat trimmed
1 onion
1 garlic clove
1 bell pepper
2 cups diced tomatoes
1/2 teaspoon oregano
1/2 teaspoon cumin
1/4 cup cilantro, chopped

Directions: Throw it all in the pot and cook on high for 4 hours, low for 2 hours.

Calories from Fat 82 (This is probably less because you should trim the excess fat before cooking.)

I like to throw it on pasta or rice.

    That's what I cook it for. YOu can shorten it if you want.

    You meant low for 4 hours or high for 2 hours, right? No worried though...just cook till done!!

    Thanks guys. No, I meant high for 4, low for 2. But its a crock pot, you can cook it however you like. I like it to fall apart so i cook it hard.
