Slice in half, season and bake it....YUMMY!!

Cut in half lengthwise, scoop out the middle a bit and save for muffins and such, stuff the halves with whatever goodness you'd like, top with a bit of cheese and bake. I've got a ton of zucchini from the garden this year and have been "prepping the boats" and freezing them to be stuffed with leftovers in the future0

Cut in half, and scoop out the inside.
Season liberally with italian seasoning and pepper.
Fill the inside with ricotta cheese.
Sprinkle with parmesan.
Bake and enjoy

Large zucchini are sometimes tough, so I like to shred them and use them for baking. Here is also a recipe for black bean zucchini cakes with shredded zucchini. They are yummy.

I make a zuchhini "boat" out of a half. Fill with cooked lean ground beef and mexi-spices. It turns into a fabulous quick winter meal.0 -
zuccini = courgette in British English, right?
the big ones are called marrows in British English, and I think you don't cook them the same as courgettes.
Sorry to not be very helpful, my parents grew their own veg, including marrows and courgettes, and I remember that my mum cooked them differently. But I don't remember the details. If you google recipes for marrow you might find some more info. On British sites. No idea what marrow is in USA English.... Zuccini on steroids sounds good though :laugh:0 -
Ratatouille! I don't miss pasta because of this dish: Rough chop and sauté eggplant and onion, then zucchini, and garlic, then add canned diced tomatoes and oregano.0

sliced zucchini, summer squash, mushrooms, green peppers, Pomi diced tomatoes, 96% lean ground beef. Sautee with your favorite seasonings (I like basil, oregano, black pepper and a hint of garlic). I eat this all the time. low fat and yummy. Sometimes I add other fresh veggies too :-)0

You can do ALOT with zucchini: roast, grill, eat raw, add to many dishes like the ones below. Ive only tried the zucchini alfredo and it was amazing!

courgette carbonora
fry some bacon and courgettes with garlic and a bit of chilli mix with cooked spaghetti ( i use brown) then mix in 0% greek yougurt - its yummy!
make sure pasta is off heat otherwise yougurt will split ...still yummy but looks like sick!0 -
