    We did just butcher so we have fresh beef in our freezer! I am looking for recipes that are calorie friendly using beef.

    Made this today. Fantastic!! Very flavorful! I found that I needed to add more water to the rice to cook it completely. I also added a can of black beans. Loved it! Thanks for sharing your recipe!

    oh I am going to try this for sure...I have such a hard time on those days that I have to work..would be nice to have a low calorie supper I could pull out of the freezer.

    I'll be making this soon - with turkey instead of ground beef, and I will leave out the corn lol. I think I'll also use 1 full can of diced tomatoes, but puree half instead of using tomato sauce. Better use of my personal resources since I'll never get around to using the other 1/2 cans of diced tomatoes and tomato sauce!
