Maryland Crab Cakes

Original Recipe Yield 4 to 6 servings

Ingredients
1 pound crabmeat (or imitation crabmeat)
1 1/2 tablespoons dry bread crumbs
2 teaspoons chopped fresh parsley
salt and pepper to taste
1 egg
1 1/2 tablespoons mayonnaise
1/2 teaspoon ground dry mustard
1 dash Old Bay Seasoning
Directions

1. Preheat oven broiler.
2. Mix together crabmeat, bread crumbs, parsley, salt and pepper.
3. Beat together egg, mayonnaise, Old Bay and mustard. Combine with other ingredients and mix well. Form into patties and place on a lightly greased broiler pan or baking sheet.
4. Refrigerate for about 30 minutes until they are firm
5. Broil for 10 to 15 minutes, until lightly brown.

    Now, I haven't tried this yet. I have some imitation crab meat and I wanted to see what else I could do with it, so I searched online. The recipe sounds pretty basic so I will try it tonight and report back on how it tastes.

    I LOVE crabcakes. I won't ever make them with imitation crabmeat though. I like imitation crab by itself as a snack or in a salad, but my crabcakes gotta be the real thing. :)
