Best thing to do is check out www.vegweb.com
It's my go to site for when I need to change it up a bit. Tofu is one of my staples...so tasty.0 -
I like tofu with black blackbeans. I use 1tbs of olive oil, around 6.5oz of tofu and 1 cup of blackbeans. I brown the tofu with the olive oil just a bit then add in the blackbeans. You can even make this in to a wrap.0

any sort of stir fry is good. Usually i just throw it in with whatever I'm cooking because if its cooked with something else, you can barely even tast the difference. I also put it in chili alot, or anything I would normally put ground beef/turkey. I have thrown it into enchiladas and tacoe before. If youre looking for something made with STRICTLY tofu, I cant help you. But like i said just add it to what you normally like to make and it adds really good nutrients as well as bulks up your dish so you can have more for left overs.0

I like to make tofu/black bean enchiladas
i drain a block of extra firm tofu and blot with paper towel. Then cube the tofu into very small squares. Chop 2 cloves of garlic and saute in about 1tsp of olive oil. Add tofu to garlic and brown. If you need more liquid, I add some fat free broth. Then toss in some seasonings. I usually put in a little salt/pepper/cumin/chili powder. Then I add 1 can of black beans, drained. After it cooks down a bit I roll in tortillas, placed seam side down and top with this sauce:
Ingredients
* 1/4 cup vegetable oil
* 2 tablespoons self-rising flour
* 1/4 cup New Mexico or California chili powder
* 1 (8 ounce) can tomato sauce
* 1 1/2 cups water
* 1/4 teaspoon ground cumin
* 1/4 teaspoon garlic powder
* 1/4 teaspoon onion salt
* salt to taste
Directions
1. Heat oil in a skillet over medium-high heat. Stir in flour and chili powder, reduce heat to medium, and cook until lightly brown, stirring constantly to prevent burning flour.
2. Gradually stir in tomato sauce, water, cumin, garlic powder, and onion salt into the flour and chili powder until smooth, and continue cooking over medium heat approximately 10 minutes, or until thickened slightly. Season to taste with salt.
or a store bought sauce will work just as well. I top sparsely with shredded cheese and bake at 350 degrees until cheese starts to brown., and serve with lettuce/tomato.0 -
If you forget to press the tofu (to get the water out) you can slice it into 1/4 to 1/2 inch pieces, season it with Old Bay and nutritional yeast, put on a cookie sheet that has been wiped with olive oil and bake for 20-30 minutes at 350F - depending on how thick you slice it. Then you can dice it and add to whatever else you are cooking or use as a meat substitute with your other veggies. Eat Tofu often!!!0

My fave is Smokey Miso Tofu from Vegan Yum Yum http://veganyumyum.com/2008/07/smokey-miso-tofu/.
I'm thinking of making it today.
I leave out the nutritional yeast.
General Tao's Tofu from Vegweb is really good. But maybe not that diet friendly ... http://vegweb.com/index.php?topic=8769.00 -
I always "marinate" tofu - I put marinate in quotes because it's not like beef or chicken, you're only just coating it, not waiting for the marinade to soak in.
Awesome marinade: equal parts: red cooking wine, soy sauce, balsamic vinegar
I press the tofu, cut it into slices, and then soak it in the marinade. Then heat up a pan on low with a little bit of brown sesame oil, and brown some garlic and onions, then brown the tofu on both sides. It's delicious! An optional extra flavor: "reduce" in some peanut sauce until tofu is glazed. Serve with rice and grilled vegetables.0
