No-Cook Fresh Tomato Sauce Recipe
Hi, I'm new. Wanted to share one of my favorite recipes:
1 1/2 pounds assorted fresh tomatoes (about 4-1/2 cups)
1/3 cup minced fresh basil
1 tablespoon extra virgin olive oil
2 garlic cloves, coarsely chopped
Salt and pepper to taste
Hot cooked angel hair pasta or spaghetti ( i use whole wheat)
Grated parmesan cheese
Drections:
In large bowl, toss tomatoes with basil, oil and garlic; season with salt and pepper to taste.
Let stand at room temperature 30-60 minutes or until juices are released from tomatoes, stirring occasionally.
Serve over hot pasta. Sprinkle a little cheese.
Yield: 3-1/2 cups
ENJOY!!!

3/4cup (calculated without pasta and cheese) equals 64 calories
4 g fat
1 g saturated fat
0 cholesterol
9 mg sodium
7 g carbohydrates
2 g fiber
2 g protein
Diabetic Exchanges: 1 vegetable, 1 fat.
