Healthy crock pot meals?

Due to not enough hours in the day, sometimes it is easier to throw something in the crockpot before heading out to work. Open to ideas? Thanks

    Theres just me and my hubby (hes fussy), so for crock pot meals I usually cook 2 chicken breasts with the following:
    1. Baby new poatatoes, parsnips, carrots, frozen peas, gravy stock - around 500cals a serving
    2. Hunters chicken cooking sauce, i use asda's own - 162cals per 1/2 jar (you could make your own too) serve with sweet potato - around 600cals
    3. cut breasts into chunks, add low cal curry sauce, I like jalfrezi, add tin of chopped tomatoes, serve with rice. around 600cals
    4. add tin of chopped tomatoes, mixed herbs, garlic, onion and serve with pasta or rice - around 450 cals.

    Chicken breasts and salsa. Good for salad, tacos... even add it to eggs.

    She has healthy, easy to make ahead of time and freeze crockpot meals that taste really good.
    Some of the recipes you pay for but there are many that are free and a good start.

    Variation of this: Chicken breasts, several cups of spinach leaves, then salsa. Cook until the chicken's done, shred chicken, add about a cup of light sour cream and warm.

    Finally, "Thai" Chicken:

    1.5 - 2 lbs boneless skinless chicken thighs (I actually use breasts)
    3/4 c hot salsa
    1/4 c smooth peanut butter
    1 TBS soy sauce or fish sauce
    2 TBS lime juice
    1 tsp freshly grated ginger

    Chopped peanuts for garnish
    Cilantro for garnish

    Spray crockpot with Pam. Place chicken in crockpot. Combine salsa, peanut butter, soy sauce, lime juice and ginger. Stir well and pour over chicken. Mix well. Cook on low 8-9 hours.

    Serve with brown rice or over whole-wheat soba noodles.

    We also love salsa chicken like was mentioned above - chicken breasts, diced tomatoes and salsa is it. I like to add other ingredients too if I have time - like corn, onion, black beans. I like to make a big batch of it and repurpose the leftovers - burritos one day, chicken and rice bowls one day and then add some chicken broth to make soup.
