    Directions
Bring a large pot of salted water to a boil. Add spinach, and cook just until wilted, about 1 minute. ...(drain, rinse under cold water, drain, squeeze dry. cut)
In a large saucepan, heat butter over medium. Add onion and garlic; season with salt and pepper. ...
Add cream cheese and milk; cook, stirring, until cream cheese is melted and smooth. Stir in spinach.

To make it 'lighter', use lower fat cream cheese and 2% milk instead of full fat. Only use enough butter, or sub with olive oil (to lessen saturated fat) to saute that onion and garlic.

How much you need? Dunno. It depends on how soupy you like the 'cream' on your spinach. For me, just enough to coat the spinach and not enough to be soupy all around it.

Like, maybe 1 T butter, 1/2 onoin, 4 garlic cloves, 4 ounces cream cheese and 1/2 cup milk to like 2 pounds of fresh spinach or 2 packages of frozen. Spice it up with your favorites, maybe a bit of nutmeg also.

I've done this one with low fat cream cheese, it was tasty!
