    I tried ginger. My cousin made me ginger tea and I hated it.

    Ginger was the spice chosen.
    My cousin came to Florida and she drank ginger tea every morning. I asked her to make me a cup and just as I expected it was awful. I'm not a ginger fan, I've tried ginger in my smoothies and always hate them but it was an easy way to get this challenge in. I don't plan on trying ginger by choice ever ever again.
    @missionenforcer is that good enough for you?

    I haven't kept up on my logging as much as I wanted to while on this trip. I've had healthy and not so healthy days. Let me tell you these theme parks do not make healthy choices an accessible option. It's annoying when all you want is healthy food so you don't have greasy food dragging you down while you're on your feet all day. The healthiest I could get was a grilled chicken sandwiches. All I wanted was a giant bowl of fruit!
    I'm loving this weather though, I've missed running outdoors so much!

    @SmashleyM914 I don't understand what was wrong with the first try on challenge 3 but i think you should be good with the last one.
    I got your minutes logged in for you.
    We have reached our destination with 4 of us maxed out. Some of the others have finally put in their minutes. We still have a couple who haven't shown up yet. We are lagging behind by 60 points ATM. Still a lot of the challenges unfinished, but our team seams to catch up over the weekends. Hope they all pull through like before.

    Hey Smashers, sorry I've been MIA this week! I feel like a crazy person trying to catch up at work after being gone for four days. Finally got back to the gym and running towards the end of the week and it feels so good. Today I ran a 5K with my sister and even ran to the race location so I could get more miles in (was totally not looking to PR so I was okay being tired starting out the race).

    Did challenge video #2 as well. Very enjoyable. I think I will do it again tomorrow to get a few more minutes in. I'm also making a stew for dinner tomorrow and plan to add thyme to it for challenge #3. Sorry for putting it off until the last minute but I WILL get it done!

    Hope you're all doing okay and that the non-loggers can chime in soon :)

    Challenge # 3 - Spice Dat Up Mon

    I choose ginger as my spice and I tried it 2 different ways.

    I made grilled sesame ginger salmon that was ahhhmazing!! I will definitely make this one again and it was super easy to make.

    I also had ginger lemon green tea. My stomach was upset the other day and a friend suggested I try it. It really did help.my upset stomach. It was ok tasting. Maybe if it was a little sweeter it would be better. I think I'll add honey next time.

    I got a good workout in at the gym yesterday morning. Ugh, looking forward to not having to use this gym! It was okay the first day, but has gotten more annoying. There's literally one tiny mirror, and yes I'm a mirror watcher when I work out. Watching my muscles motivates me :) IDK, the equipment is just so limited it makes me crazy. On top of my morning workout we did a good amount of swimming yesterday and walked to and from the arcade before dinner.

    We're leaving Orlando and heading to Tampa today to visit my husbands cousin for a few days. Then back to Lakeland to see some friends we have out here. I think we're all ready to be home. We miss our beds and fur babies!

    I have no clue how many minutes I'm at, but I'm sure I'll end up with more minutes today. No gym though, time to pack!

    Challenge # 3 - Spice Dat Up Mon
    For challenge 3 I had ginger tea, sorrel and saltfish this week. These use ginger and scotch bonnet pepper.

    Sorrel is a drink popular in thr Caribbean aroubd Christmas time but I love it so make it year round :D . It is made from the petals of a type of hibiscus flower and spiced with ginger, cinnamon and cloves.

    Saltfish is a popular Sunday breakfast in the Caribbean. It's made from salted cod fish, tomatoes, onions, garlic and scotch bonnet pepper.

    Challenge #3
    I chose thyme for my spice.
    I found a simple beef stew recipe a couple weeks ago (no other spices than salt and pepper), so I decided to add thyme. I put it on the beef while browning it and then added more to the gravy as it was cooking in the crockpot. GREAT flavor and definitely something I would make again! Even my very picky boys liked it :)
