Thanksgiving desserts?

I'm in charge of desserts two days in a row (Thanksgiving and Black Friday) AND I won't be able to use the oven on Thanksgiving either, so I would love some ideas of recipes that can be done 1-2 days ahead...
My husband's requesting a pumpkin pie so that's on the list for Thursday, I was thinking cheesecake for Friday (any favorite recipe?), but I'd like something else for Wednesday (or a couple more things) and I'm a bit at a loss. Some fruit dessert (someone wants cobbler but I'm not sure it keeps well?) and/or another cheesecake.
Suggestions?
Definitely not looking for low calorie recipes so don't even suggest those.

I made a Pumpkin Trifle that was a bit hit. I "sorta" used a recipe (not the gingerbread one).....I started with a dense pumpkin cake (using a mix, eggs, oil & pumpkin puree)....cut it into cubes. Jello makes a cheesecake pudding mix & a pumpkin spice pudding mix......I used one of each and Cool Whip. I questioned the toffee bit sprinkles, but they were really good.0 -
I see someone above already mentioned it but my vote is tiramisu. It needs to sit for a day or two so it's the perfect make ahead. People will likely already have their fill of pumpkin, apple, etc so it's nice to offer something different, plus it's incredibly delicious. I'm either going to make that or bread pudding.1

For Christmas Me and my DIL make the Pavlova for Christmas Day then use the leftover egg yolks to make a Cointreau chocolate mousse for Boxing Day.

I recently found a great (and easy) cheesecake recipe! Cookie dough (of your choice...I used a roll of Nestle chocolate chip) as the crust, a block of cream cheese, .5 c sugar, one egg beaten for the filling, and as much cookie dough as you prefer scattered on top. Bake at 350 for 30 minutes and let cool.1

I'm making three desserts, all of which need to be made a day ahead so they can cool and set.

Pumpkin cheesecake with gingersnap crust and caramel sauce. It's pretty much this recipe for ingredients, but instead of cooking the filling on the stove, you just mix everything together in the mixer. This author took the standard recipe and turned it into something that is way too much work. And the caramel sauce is just brown sugar, butter, cream and dash salt - no lemon or Karo syrup.
