I LOVE this site and have tried many of her recipes, but the ones I repeat the most are the balsamic steak and tomato (SO YUM!), Barbacoa Pork (slow cooker pulled pork - so good on rice or in a burrito), Southwest Black Bean Salad, Carne Bistec (Columbian steak), Chicken Ropa Vieja (slow cooker pulled chicken), Sante Fe Chicken, Shrimp Creole, Asian Turkey Meatballs, and Chicken Tikka Masala.
As you can see, I like her recipes for main entrees, and I haven't yet made one I don't like.
Also tried the cauliflower puree, homemade oven fries, cuban style black beans and beet salad.
Actually, I wasn't fussy for the shepherd's pie.
I am trying the Barbacoa Pork ASAP... I have it on my top list of recipes to try. Going to do the Santa Fe Chicken next week!! Looks like me and you like the same Foods0 -
Oh and we LOVED the Mexican Shrimp Cobb Salad she recently posted. I drizzled it with a smidge of Ranch. DH is already asking for it again.0

The Brazilian Cornmeal Cake is the only thing I made and it was awesome. If you like cornmeal and egg custard (two of my most favorite things)... it's definitely one to try.
Just be warned - it's not cornbread. It's a dessert. A pretty awesome one, in my opinion.
Make sure you really do use the COARSE corn meal. It makes a big difference in this recipe.0 -
New to this site and have been using skinny taste for about a month and a half. Love the Spinach Lasagna Rolls and the Cheesy Rotisserie Chicken Enchilada Skillet.1

The no bake peanut butter pie definitely fills my cravings!1

Look up protein bagels. Easy and reasonable calories.1

I've had a few of the Skinnytaste recipes not work out, but most of them I've tried are really tasty. Almost any recipe I make any more is from her site.
Some good ones: Chicken Enchilada Soup, Salisbury Steak, Spaghetti Squash Lasagna Boats, Dijon Chicken, Crock Pot Tomato Soup, Chicken Cordon Bleu0 -
My favorite thing is her Instant Pot salsa chicken. I make it about weekly or I choose another sauce instead of salsa b/c it’s literally just 1 cup of any liquid. But the salsa chicken is perfect for salads, tacos, lunches, etc! My next try is her Piccadillo with some adjustments.
I made her buffalo something with homemade blue cheese dressing. I wasn’t impressed. : /0 -
Sesame Encrusted Baked Chicken Tenders. When you want a change from grilled or baked chicken breasts.

The Thai chicken and pineapple stir fry is on my rotation at least twice a month and sometimes 3 times. I have used her site for 2 or 3 years now and have been happy with most of her recipes. What I like is how easy they are to change out ingredients to what I happen to have at home.0
