    Linguine mixed with a little spiralized courgette. Pasta sauce was a hybrid of aglio olio and puttanesca. Oil packed sun dried tomatoes where anchovy, garlic, chilli flakes, capers and olives were cooked in the oil then emulsified with some starchy pasta water to stop the garlic from burning. Side salad of pear, mint, feta and chive in a lemon vinaigrette.

    How does air fried food compare to actual deep fried food? I'd love to make fish sticks and gyukatsu in one of those, but I don't know if it would be worth the price.

    I love my air fryer ever since I got it as a birthday gift in February. But it is essentially a convection oven where the fan is very aggressive so that food cooks much more quickly in it. Things like chicken drumsticks and wings taste deep fried because it is great at rendering down subcutaneous fat so that skin becomes very thin and crisp. Same for duck and fish.

    For chips I need to do more work. Coat the fries in oil, and I usually toss in potato starch. For things like frozen breaded fish I need to spray some oil.
