i like to chop them up and sprinkle olive oil and herbs. my go to are herbs de provence, fresh garlic and crushed red pepper. any herb or seasoning like mrs. dash will do. then bake till crispy outside tender inside and broil for the last 2 mins or so if u like them really crispy and golden like me. goes with almost any meat dish.0

I love dry roast potatoes. Peel, if they are large cut then in half or quarters, par-boil for about 10 minutes. Spray an ovenproof dish with spray oil, add potatoes, spray again and roast in oven for about an hour or so until they are crispy on the outside, fluffy inside. Great with pot roasts

'Good Chips' - Allow 1 or 2 potatos per person depending how big they are. Cut each potato into 6-8 wedges, add a spinkle of salt, pepper and/or dried herbs, chilli flakes, paprika, barbeque seasoning, etc. Spray with low cal oil spray or use your hands to rub 1 tbs of olive oil over them, then put on a baking tray in a hot oven for 45 minutes to an hour. Delicious

Nice recipe Tabby! Works equally well with sweet potatoes. You can cut down on oil even more if you pour a small amount into a plastic bag and shake the chips around so they get very lightly coated.0

Stay away from the potatoes, they are too high GI. stick to new baby potatoes or none at all. how much does a bag of potatoes cost there? throw them I say. replace with low GI rice or sweet potato. 0
