This is a fun thread that I have seen on other boards. What are you all having for dinner tonight?

I'm having a pan fried pork chop, with roasted brussel sprouts and roasted radishes.

    Kind of boring but was really good...Baked chicken breast on a salad with avocado, ranch dressing, lettuce, radishes, onions and tomato. I had been craving a salad because I hadn't had one for a while. Also had a hot wing.

    Today Monday 9th July:
    Breakfast- 2 scrambled eggs- 2 strips of bacon-lettuce
    Lunch- 2 egg muffins(baked yesterday)- fried fish-lettuce
    Dinner- Baked salmon-mixed salad with goat cheese
    Desert- Chia seed pudding from coconut milk (love that)

    Pork chops cooked in coconut curry sauce, califlower stir-fried rice and asparagus.

    There are many recipes online. I make a simple version
    Soak 4 table spoons of chia seeds overnight in water.
    The following day add fresh coconut milk, cinnamon & 1 tsp vanilla essence
    I just love this dessert.
    For my kids I add some syrup and cacao

    Last night I meal prepped some Keto Chicken salad. I cooked 1.5 pounds of chicken breast in coconut oil with paprika, salt, and pepper. I chopped 3 stalks of celery, 1/4 cup of peacans, and 1/2 cup of mayo. It turned out really well! For a little added pizzazz I am eating my lunch serving with these Romano cheese crisps that have no carbs and kind of seems like a cracker.

    We plan weekly so this is what's for dinner in my house next week:

    Tomorrow - eating out due to seeing Hamilton tomorrow night (SUPER excited!!)

    Monday - Taco Salad
    Tuesday - Grilled Cheeseburgers
    Wednesday - Mississippi Pot Roast https://belleofthekitchen.com/2016/04/13/mississippi-pot-roast/
    Thursday - Chicken Salad (use Sam's club rotisserie chicken, hormel real bacon bits, half an avocado, mini tomatoes, blue cheese crumbles, lettuce & balsalmic vinegar and EVOO)....so good and so easy...

    Today, I was traveling by car, so it wasn't a typical day. I had a string cheese and a 100 cal Muscle Milk for breakfast, and a Culver's double mushroom and Swiss (no bun) with a side salad for dinner. I did indulge in a some of the "cold stuff" after, but I think it'll be ok given the rest of my day/week. Yes, it was worth it!
