Chicken and broccoli stir fry. It’s quick, fast, and easy to fit into my calories.

Roasted acorn squash, lemon pepper broccoli and zucchini and Quorn "chicken" pan steamed with some BBQ sauce.

Then I had a pear and some crackers, and a little cheese and walnuts.

I baked chicken and roasted veggies (brussels sprouts, carrots and broccoli), plus made mac n cheese to go with for hubby n the kids though i personally didn’t have any. Roasted veggies and baked chicken is my go to oops-i-forgot-about-dinner fixit. 😂 So long as I remember I need to feed people by 5, I can have dinner ready to eat before 6. 👍🏻

Ham and cheese sandwich and Dannon lite and fit yogurt. I packed some food quickly to get to work. I was called in at the last minute.

A turkey stir fry that will continue to serve as lunch for a few days. It includes:
ground turkey, a cucumber, bell peppers, jalapenos, asparagus, onion, garlic, and carrots. I'll probably add cayenne, chili powder, black pepper, and maybe some cumin.

I'm making vegan mac & cheese and some roasted butternut squash.

One of my favorite vegan dishes uses butternut squash in the vegan mac & cheese recipe: https://kripalu.org/resources/kripalu-recipe-squash-roni

I meant to grab a squash from Mom's last weekend. I make this every fall after she harvests.

A large chicken salad: lettuce, spinach, tomatoes, carrots, cucumber. chopped chicken cubes, shredded cheese, and cilantro dressing. Also a pomegranate. May have yogurt for dessert.
