    I agree with the poster above. I'm not sure how the average omelette wouldn't be appropriate for ketogenic diets. It's kind of like "vegan focaccia" well of course it's vegan - flour, yeast, and olive oil (I guess in that case, if you use sugar to proof the yeast you would want sugar that isn't filtered through bone char).

    We do an omelette for the family - 1 ostrich egg is enough and sooo creamy!

    Also, yeast is neither plant nor animal (fungus), so I guess it depends on the particular rules a given vegan has adopted whether that's allowed.
