Beginners food help

I looked through multiple pages before posting because I know others likely looking for the same thing.
I’m someone who has never cooked much before and looking for some staple meals to get started. I have done the chicken breast and veggies before but get bored very quickly with that. I tried searching but quickly get overwhelmed with the “easy” recipes have all these ingredients that I don’t see myself ever using but in this one recipe.
I’m an obese female in my mid 20s. I have lost weight before by just barely eating and don’t want to do that again. Any tips would be greatly appreciated. Thank you

I like crockpot Chicken... cook a large batch and then I make chicken salad, chicken fajitas, buffalo chicken wraps, chicken, salsa, guacamole wraps, chicken stir fry....just change the seasoning for a different meal... I cook about 5 breast and it lasts a good week... with minimal cooking!4

This is seriously my favorite pot roast recipe. We always make the risotto to go with it too, but it would be great on it's own.

The vast majority of my cooking is some kind of protein (meat, poultry, pork, fish) with some kind of veg and some kind of grain or starch. You don't have to just do chicken...there are a wide variety of meats and cuts and different ways of cooking them, though I mostly grill. Seasonings are usually pretty basic or I'll use a marinade of some kind...sometimes I make it and sometimes I buy it.
Other than that, we do a lot of soups and stews this time of year and none of them are particularly complicated. We save "fancy" cooking for when we have guests.

Things I make regularly:
- Sauceless pastas - noodles, veggies, and sometimes a protein. Usually the veggies and protein are pan cooked in a little oil or butter with garlic and sometimes onion.
- Blackbean burgers
- Different sandwiches - chicken breast with spinach and green apple, BLT, ham and cheese, etc.
- Quesadillas - my favorite is monterey jack, goat cheese, a can of black beans, a can of corn or cup of frozen corn, and a bell pepper
- Soups - corn chowder, vegetable soup, bean soups
I get most of my recipes from the Cooks Illustrated Cook Book and magazine.

You don't HAVE to start cooking from recipes to start weight loss. You can continue eating what you ate before, just weigh it and log it. It's more sustainable that way and maybe less intimidating.
I'm more of a "heat and eat" person than a real "cook" - I keep several proteins (frozen salmon burgers, deli ham), veggies, and bottled sauces around then heat up what I want each day. It's easy to count the calories that way.
For recipes, I use allrecipes.com a lot. You can search for "easy" recipes or by ingredients that you like or have on hand. Soups are really easy.1 -

Was surprised that the instant brown rice was invisible in this dish and I only use half a pound of turkey but the whole can of water chestnuts. Where it says to top with any fresh herbs I love the combination of fresh basil and fresh mint. Oh so good. I put in half the carrot while cooking the meat and leave some to put on raw as well. I leave out the bell pepper entirely because I don't like them but hubbie says they make the dish (I saute them on the side for him).

I serve this with japanese style rice and steamed vegetables sprinkled with garlic powder, onion powder, and black pepper. Though I couldn't imagine doing this meal without my rice cooker to cook the rice and veggies for me.
I just searched "meals under 400 calories" in google and found many things that taste pretty amazing.0
