Turkey meal prep

I have a giant turkey and my kids aren’t really crazy about turkey leftovers, so I’m going to hopefully get them to eat one meal out of it, and use the rest to meal prep. I’m not picky and I don’t tire from eating the same thing over and over so can you please give me some suggestions for using up the white meat? I can freeze stuff too, so I’m hoping to get quite a few portions out of it.

Here are my favourite ways to use up leftover roast chicken or turkey.

An incredibly easy salad of turkey or chicken meat mixed with a chopped avocado, a jar of commercial salsa and some coriander. I serve in wraps or soft taco shells

The bastilla recipe starts with fresh chicken, but i would just fry up the onions and garlic, add the water and a chicken stock cube than chop up the chicken into that mixture and proceed to step 3.

I love turkey.
I would cut it up and package it in individual portions and freeze for salads, wraps and sandwiches.
