Crockpot recipes?!

I was just gifted a new crockpot and am wondering if anyone has some tried and true healthy recipes to share? I am on a very low sodium restriction and am off dairy as well. I’ve been looking online and it is a bit overwhelming, so I thought I’d check in here for any healthy favorites you might want to share. Also, I definitely welcome any crock pot tips or techniques you may have picked up along the way too!

    I honestly don't know how I'd cook a crock pot... maybe find a bigger crock pot to put it in and let it cook on low for a few days?

    Black rice and coconut milk with flavour of choice. We use chai tea flavour or vanilla. 2 cups black rice, 1 can coconut milk, then use the empty can and add 3 cans water. Add flavour...1 T chai tea, or vanilla extract or maple syrup or whatever you prefer. Cook on low for 8 hours or overnight. My boys love it for breakfast or have it for dessert. Add chopped nuts and seeds on top for texture.

    Made this last night for dinner and it turned out pretty good: Package of Bratwursts, 1 can of sauerkraut, 1 diced onion, 2 sliced apples, 1 TBSP of brown sugar. Cook on low for 4 hours. Serve it with spicy brown mustard.

    One tip I've learned is if your recipe calls for ground meat (beef, turkey, etc.) brown it first. Otherwise it kind of disintegrates and is not appetizing at all. Also, pasta and rice tend to become mushy and absorb all the liquid so it's best not to include them, or cook separately and add right before serving.
