Summer Squash Parmesan Rounds

These are delish and healthy too! Just cut the squash in 1/4" thick rounds. Sprinkle garlic salt (I used garlic powder), some freshly ground pepper, and a 1/2 tsp (or so) of grated parmesan cheese. Pop in the oven for about 15 mins...golden brown. You can also broil them for a couple minutes.

    I love all squashes!! I also cook other vegetables like this, like brussel sprouts (cut in halves), kale, cauliflower...

    Parmesan, garlic powder, salt and pepper... Good on just about any oven roasted veggie.

    I also drizzle a little olive oil to add a light caramelization on veggies.

    Sounds wonderful! I like the idea of using this on other veggies as well such as brussels sprouts.
    I have done something very similar with zucchini but in a fry pan instead.

    Agree, Zucchini is delicious in pan too!!
