Confusion about nutrition label

In this image, the total carbs are 108g. 7g Fiber and 13g sugar. The fiber and sugar only add up to 20g, where are the rest of the carbs?

    They're just... carbs. Sugar and fiber are just specific types of carbs that some people like to track. I'm sure someone can come along and give you an idea of the specific scientific compounds, but just like we don't worry about every variation of proteins and fats on the food label, the same goes for carbs. You'll notice the total fat doesn't match the breakdown either, just calls out the specific types of fats the USDA thinks people should keep an eye on.

    Starch is a carb. Flour is a starch (made from wheat, and grains are primarily starches), and cookies typically contain flour. Oats and nuts also contain starch, as does cornstarch, etc.

    As kimny72 said, fiber and sugar are just listed separately too since it was at some point decided that knowing that information was of enough interest/importance that it should be listed on the label. What's specifically listed has changed before and is in the process of changing now, at least in the US.
