Dinner was a fail. Griddled romaine with ranch was good. The meatloaf fell apart when I tried to slice it. Forgot to season the rosti. Leftover onion gravy from last night.

Sunday night dinner at the zombie apocalypse: steak, mashed sweet potato, salad. Washed down with a Belgian White.
When we went up to Canada for family things last week, we got back in time before the border closed. However, we did arrive in the midst of the grocery panic. There were only a few things left, locally, in the fresh meats section: packs of Italian sausage and a few steaks, surprisingly. And fresh produce was pretty well depleted. Anyway, here's the last of the fresh. We can fill in as needed all day with plentiful fresh home-baked bread and, for the next few days, the bean soup I posted yesterday, as we transition into long-haul eating until the supply chain cycles.

Grilled zucchini strips with EVOO, chicken breast wrapped in speck (thinly sliced salted cured pork--very lean), and browned in a nonstick frying pan, homemade fruit salad.2

Simple stuff tonight: tuna melts on my homemade, no-knead honey whole wheat, whey-augmented bread. Combo meal with the last of the bean soup I posted the other day. No pics. In-home confinement continues, although it was a beautiful day to sit out on the deck and soak up some sunshine. Spring is coming and with that, we're hoping for a light at the end of this tunnel.3

Taco Tuesday (dinner last night)
I did however make a change. I did half ground beef and the other half was a lentils & quinoa!
Cooked it with tomato sauce and seasonings. Super yummy in hard shells, cheese, lettuce and salsa.2 -
Pasta with lentils in a tomato sauce. I had some leftover sauce from clams and shrimp--about half a cup. I just threw that in too, and it gave the lentils great flavor.1

Thursday dinner (lockdown day 10): going with the grain - baked black bean/bulgur burgers, fresh out of the oven no-knead bread, roasted baby potatoes. Except for the cheese for the burgers, vegan. Will figure my MFP macro counts later this evening. Burgers intended for two nights' dinner; they are filling (especially with all this bulky food). Shaped the patties to fit the bread. Overstuffed my Cuisinart, the processor couldn't quite get the onions mixed.

I got a whole salmon. Cut some of it up into steaks, some into boneless fillets and this is leftover 500g. Out this the actual meat was 300g. Perfect for one.
