I simply LOVE the fall!! It is my absolute favorite season. It is just the perfect temperature, the produce is wonderful, and nature is beautiful at this time. There is nothing better in my opinion than spending a fall day outside (going for a walk...raking leaves...apple picking...etc.) and coming home to warm and hearty meal.

With all that said....what are your favorite autumn recipes?? :smile:

  • (I posted this a couple of days ago but figured it fit well with this thread)

    These are PUMPKIN MUFFINS....they are EXTREMELY moist and delicious!! Next time I make them, I am going to sprinkle the top with pecans and pumpkin seeds. I ended up freezing half the recipe so I will have them last longer. So far they have been successful in filling in for the pumpkin loaf I used to enjoy so much last year during my study sessions at Starbucks.

    1 box of Spice cake mix (carrot cake mix would probably work too)
    1 15 ounce can of pumpkin (not pie filling)
    1/2 cup of milk (I used 1%)
    1/2 cup of water
    1 egg (I used egg substitute since I am on a low cholesterol diet)

    Mix all ingredients together with an electric mixer. Divide into muffin tin with muffin cups. Bake for about 18-20 minutes at 350.

    24 Servings, 1 muffin a serving

    Calories: 91
    Fat: 1
    Saturated Fat: 1
    Carbs: 19
    Fiber: 1
    Protein: 2
  • I found this recipe online a few weeks ago. It is pumpkin-apple soup....can we get any more fall than that? I think not! I have not made it yet..but it is on the menu for next week!! Yum!!

    I like acorn squash halves with cheese. I cut an acorn squash in half, scoop the seeds out then nuke it in the microwave for 8 minutes. Then I fill the seed hole with a cheese mixture that looks like this:

    one cup of shredded cheese of your choice (I like a cheddar Monterrey jack mix)
    one teaspoon season pepper
    one and a half teaspoon oregano or your favorite herb (dried of course)
    two tablespoons Parmesan cheese

    Mix that together and fill the hole in the squash, then sprinkle with season salt all over the cheese and squash. Back into the microwave for about 5 minutes or until the cheese is bubbly and the squash is soft! SOOO GOOD!

    Mom's Thanksgiving Cranberry Jell-O Salad

    2 cups hot water
    1 small can crushed pineapple
    2 packs sugar free raspberry Jell-O
    1/2 pint lowfat sour cream
    1 large can whole cranberry sauce
    1/2 cup chopped nuts (optional)

    Dissolve Jell-O in hot water. Add cranberry sauce and chill until syrupy. Fold in sour cream and nuts. Chill until firm.



    Mama's Grated Thanksgiving Sweet Potato Pudding

    2 cups grated raw sweet potatoes
    1 1/2 cups sugar (or Splenda)
    2 eggs, beaten
    1 t nutmeg
    1/2 t cinnamon
    2 T margarine
    1 t vanilla
    1 large can fat free evaporated milk

    Combine and bake at 350 degrees for 45 minutes.



    Grandma's Soup

    1 lb. chicken, cooked and shredded
    1 large can tomatoes (no salt added)
    1 bag frozen lima beans
    6 carrots, peeled and sliced
    6 potatoes, peeled and diced
    2-3 bay leaves
    salt and pepper to taste
    2 large onions, peeled and sliced
    6 cups water

    Boil chicken in water until done. Reserve broth. Add all ingredients and simmer together in large pot on stove for several hours.


    Mmmmm...now I'm hungry.

    Every fall I make my famous pumpkin cheese cake that my family LOVES. It has a walnut/brown sugar crusty top. I wont share the recipe cuz it is rediculously fattening & I don't want to be a bad influence on my fellow MFP pals.
