Di san xian, ma po tofu and rice. Most recipes for di san xian call to deep fry the potato and aubergine cubes separately. I tossed in vegetable oil in a plastic bag and cooked 15 minutes in the air fryer. Deviated from the traditional recipe by using red and yellow bell pepper instead of green and red onion instead of green. It's a great dish to order if you are a Sichuan restaurant and have someone at the table who can't handle spicy food. Di san xian is a Sichuan dish that is never spicy unlike most Sichuan food.

Tapas spread was quite veggie centric. Spanish tortilla and thinly sliced mojama (=salt cured tuna) sprinkled with almond flakes were the protein dishes. Veg was portuguese marinated carrots, roasted cherry tomatoes, favas con jamon made with runner beans instead of broad beans, Catalan spinach.

Sous vide pork tenderloin taken to medium at 58C and reverse seared in the air fryer. I think next time I will use a cast iron pan as that is more precise. Hasselback new potatoes. Sauteed sugar snaps. Warmed up leftover hollandaise. The standard wisdom is you can't warm up leftover hollandaise but 10-20 seconds on the lowest setting of the microwave works for me. If it starts to split a little, it can be rescued by whisking vigorously with a few drops of cold water.
