I made Loco Moco last night.
Leftovers for lunch today, but no fried egg because its hard to cook that in a microwave.2 -
Peking duck breast. Hack's version. Vietnamese cahn soup.

Mexican Chicken in the Crockpot with a salad. The Mexican Chicken does not look that good but it is: Chunks of chicken, black beans, corn, salsa in a crockpot cooked in the crockpot about 5 or 6 hours. We add shredded cheese just before serving. Tastes good and plenty of protein.

Baked potato, salad and a vegan pea protein based burger from brand Plant Chef from Tesco. It did taste like meat, but not like a burger. Reminded me of frikandel, a type of Dutch processed meat served in fast food chains.

Rice noodle, veg and garlic stir fry for WFH lunch. Cooked in duck fat, and seasoned with oyster and XO sauces.

Lunch of rice noodle, hispi cabbage, garlic, oyster sauce stir fry topped with hot sauce and shredded goose wing confit made from Xmas leftovers. Fried in a little goose fat.

Well, it's been several months of intense moving/downsizing for us (covid impacts the moving process as much as it impacts everything else right now), so I haven't posted anything after being fairly frequent here. One great benefit of our new place is close proximity to a working seafood co-op store. Last night's dinner was fresh jumbo Gulf shrimp in a homemade Italian-style sauce over Fettuccine with steamed veg. The pan has 30 of the 16/20 sized shrimp, 10 for each of us, about 0.5lb per person. And we're still rocking our Christmas decorations, since we squeaked into settling here with about a week to spare before the holiday. Aside from the Fettuccine, I presume the macros on this meal were pretty good (still have to compute them).
