    Creamy coconut black beans, quinoa, and some pan fried Spam cubes. I made a “tropical” dressing to drizzle over and sliced scallions. Very good and SUPER filling!

    I forgot to take pics at meals today, but of course I remembered for dessert because I made custard sauce and it didn’t split!! 😊

    Thai pomelo salad, air fryer chicken wings with Vietnamese caramel/fish sauce, rice. The hubby wanted some satay sauce for his rice.
