Dinner incoming homemade broth chicken veg noodle soup

BBQ (lots of meat), with a apple dessert, apple juice and chocolate mint slices. Will have to take it easy.

Having baked fish and grits & side salad tonight
(I made pumpkin chili (allrecipes.com) last night instead since my baked beans were expired. It was so good!!!)

A recipe from Chef John for Rigatoni ala Genovese. Took two hours to prep and chop, then says to simmer for 8-10 hours, “stirring occasionally”.
Bump that. I’m transferring it to a crockpot as soon as it cooks down a little. Right now it’s a very full pot.It’s basically beef, a little white wine, and six pounds of onions, with a few other things. No tomatoes, other than a tablespoon of tomato sauce to deepen the color.
It’s supposed to all “melt” together after all those hours of simmering and be fantastically savory.

good grief! I’ve already logged over 5600 steps just making breakfast and this pasta sauce.

Unstuffed peppers (like stuffed peppers, except instead of filling a hollowed-out pepper with meat sauce and baking, you chop up the peppers and mix into a sauce in a skillet)

Made stuffed pepper soup yesterday, so maybe leftovers today with a side of something new.
Or maybe salisbury steak with mushroom gravy and green beans on the side.

haha, yeah I know, it’s pretty bad. My brothers in law are really into meat, and not into salad. We probably do that like once every three months.

It looks delicious, though! I did think the potato salad to be scrambled eggs, ha ha. I probably need glasses:)

the Rigatoni alla Genovese was a win, high protein, lots of leftovers to freeze, and the crockpot worked great.
What was wierd was I wanted to use these yard-long “candlestick” or candleario pasta, which was the whole reason for making it. Each piece was 50 grams.
I tried breaking before cooking. Bad idea. Next time will cook and then slice or scissor into bite sized pieces. It was very thick and sturdy, had almost a meaty texture itself.
Recipe suggested moving sauce to a skillet, adding Parmesan, and finishing off the barely al-dente pasta with it in the skillet.
It was very rich and very filling, and the sauce ended up being under 400 calories for 1 1/2 cups apiece. I was surprised. I thought with the salt pork it would be twice that.

Tonight my daughter-in-law is preparing chicken empanadas.
That meat plate looked terrific to me! But then, I'm a carnivore, so…

On Halloween, with multiple kids holding to multiple schedules (parties, Trick-or-Treating with friends, movies, etc) we just get pizza and leave it on the counter for people to grab a slice as they run between errands.

Barf. Family Halloween tradition.
Beef stew, mixed with sour cream, baked in an oven with drop biscuit dumplings on top.
So christened by a coworker who was appalled by the appearance of the leftovers. It’s been “Barf” ever since. 😂

I am roasting a whole chicken and veg in my new toy.
my first attempt was straight up French fries, which my old round water tank Ninja does brilliantly. They were awful. I tossed them multiple times but some still came out completely raw and uncooked, and they took as long or longer than the old one. Maybe I used the wrong setting. 🤨
if the chicken and veg doesn’t turn out, I’m repacking and returning it. 🤞🏻3 -
