    Bump. I got a crock pot for my birthday or maybe Christmas last year and it crying to be used!! I can't wait to start making some of these delicious meals!!

    Crock Pot Minestrone Soup

    Gina's Weight Watcher Recipes

    Servings: 6 • Serving Size: 1 1/2 cups • Old Points: 4 • Points+: 5

    Calories: 215.7 • Fat: 0.7 g • Protein: 8.7 g • Carb: 42.0 g • Fiber: 6.7 g

    1/2 onion, chopped

    1 cup carrots, chopped

    1 celery stalk, chopped

    2 garlic cloves, minced

    1 (28 oz) can diced tomatoes

    1 (15 oz) can white beans, drained, rinsed (cannellini or navy)

    3 cups fat free chicken broth (or vegetable broth for vegetarians)

    1 oz chunk of good Parmesan cheese rind

    1 fresh rosemary sprig

    2 bay leaves

    2 tbsp chopped fresh basil

    1/4 cup chopped fresh Italian parsley leaves

    salt and fresh pepper

    1 medium zucchini, chopped

    2 cups chopped fresh or frozen (defrosted) spinach

    2 cups cooked small pasta like ditalini or elbows (al dente)

    extra parmesan cheese to top (extra pts)

    Rinse and drain beans. Puree beans with 1 cup of the broth in a blender.

    In a crock pot, combine broth, tomatoes, pureed beans, carrots, celery, onion, garlic, herbs, Parmesan cheese rind, salt and pepper. Cover and cook on low for 6 to 8 hours.

    Forty minutes before the soup is done cooking, add zucchini and spinach. Cover and cook 30 more minutes. Add cooked pasta, cook 10 minutes more. Remove bay leaves, rosemary sprig, parmesan rind and season to taste with salt and black pepper. Ladle soup into bowls and top with extra parmesan cheese.

    Salsa chicken:
    4 lbs boneless, skinless chicken breasts
    1 large jar salsa (I like HOT salsa)

    Spray crockpot with non-stick spray. Pour a little salsa in the bottom to coat, Lay chicken breasts on top, if you need to do layers to fit it all in, put salsa between the layers and pour the rest of the jar over the top. Cook on low 8 hrs or high 5-6 hours. (I have even put the breasts in frozen when I have forgotten to defrost!)

    The meat is sooo tender!! You can shred it, slice it, dice it. I use it for tacos, burritos, sandwiches, over rice, anything you can think of.

    I often add any or all of the following:

    can black beans
    frozen corn
    onions (cut them in large chunks)
    cloves of garlic (whole, peeled, they will get super soft & sweet)
    celery, cut in big chunks
    can of diced tomatoes

    Pork and Sauerkraut-

    any type of prok- chops, loin, roast, shoulder- it doesn't matter- cover in sauerkraut- canned or bagged, and simmer on med/low all day- pork melts in your mouth- serve it over mashed potatoes if you want a real treat!

    I am new and have a stupid question. Why do people respond with just the word "bump'??

    Oh and by the way.. I love new crockpot recipes.. Thanks everyone.. Here is a fave of my family..

    Pepperoncini Chicken Sandwiches

    1 bag of frozen chicken breasts
    1 jar of sliced pepperoncini peppers (you can pour in the juice for more flavor)
    1 package of Dry Italian Dressing Mix (sometimes I use the Zesty kind)

    Cook all ingredients in crockpot until you are able to shred.. Serve on your favorite bun. I normally cook them on low all day while I am at work on Low.. or just a few hours on High.

    1 can Campbells golden mushroom soup with sea salt
    2 cups fat free chicken broth
    1 1/2 lbs boneless skinless chicken breasts
    6 tbsp sour cream
    1 box Meijer naturals whole wheat macaroni noodles
    2 stalks celery, chopped

    Put chicken, broth, soup, and celery into crock pot
    Set crock pot to high and cook for 5 hours
    Pull apart chicken using two forks
    Turn crock pot to low and stir in sour cream 1tbsp at a time, cook for 20 more min.
    Cook macaroni noodles according to package
    Serve chicken mixture over noodles
