    Slow Cooker Mexican Chicken

    Number of Servings: 6

    Ingredients:
    4 boneless, skinless chicken breasts
    1 cup salsa
    1 package reduced sodium taco seasoning
    1 can reduced fat cream of mushroom soup (condensed)
    1/2 cup reduced fat sour cream

    Directions:
    Add chicken to slow cooker.
    Sprinkle taco seasoning over chicken.
    Pour salsa and soup over chicken.
    Cook on low for 6 to 8 hours.
    Remove from heat and stir in sour cream.
    Serve with rice.

    Pork tacos

    Pork Shoulder
    1 can of diced tomatoes
    1 can diced salsa tomatoes (with jalapeno and onion mixed in)
    3/4 Chicken stock
    Whatever taco seasonings you want.... salt, pepper....

    Cook on low for 10 hours.... shred pork and add to soft tortilla - top with your favorite toppings! YUMMMMMMM-O!!!

    Yummy, going to the gym a couple of days a week and figured crock pot cooking lets the family eat on time, yay. Awesome recipes guys and gals, keep me busy for a month.

    I just made the "refried beans without the refry" from allrecipes.com

    Ingredients:
    1 onion, peeled and halved
    3 cups dry pinto beans, rinsed
    1/2 fresh jalapeno pepper, seeded and chopped
    2 tablespoons minced garlic
    5 teaspoons salt
    1 3/4 teaspoons fresh ground black pepper
    1/8 teaspoon ground cumin, optional
    9 cups water

    Directions:
    Place the onion, rinsed beans, jalapeno, garlic, salt, pepper, and cumin into a slow cooker. Pour in the water and stir to combine. Cook on High for 8 hours, adding more water as needed. Note: if more than 1 cup of water has evaporated during cooking, then the temperature is too high.
    Once the beans have cooked, strain them, and reserve the liquid. Mash the beans with a potato masher, adding the reserved water as needed to attain desired consistency.

    **I didn't add any salt at all. I used a chicken bullion cube instead (just tossed it in the pot). I also added a whole tsp of cumin, and other reviewers added some chili powder too. I used a can of chopped green chilies instead of a jalapeño because that's what i had. I did half black half pinto beans and it honestly came out FANTASTIC. It would have been good with a bay leaf while simmering.

    Very flexible recipe, makes enough to have now plus freeze for later, low in calories (allrecipes says 15 servings are 139 calories each, but when I added it to MFP it was only ~90 calories for 10 servings...so IDK who to believe but either way it's healthy low cal. With rice, it makes a full protein.

    Easy Chili

    1lb lean ground beef... 93/7 or higher.
    1lb ground turkey
    1 medium jar of picante sauce- med, mild, or hot
    3-4 cans of beans. I prefer one of each. Red Kidney, pinto, black beans, and garbanzo beans.

    Turn slow cooker onto low and add picante sauce and beans.
    Brown the ground beef and strain what little fat there may be, add to slow cooker.
    Brown turkey and add to slow cooker.
    Put lid on and cook for at least 2-4 hours. I actually let mine cook for 6-8 hours while I am at work and it just absorbs the flavors more the longer you cook it.

    Top with favorite topping- shredded cheese, a small amount of sour cream, or eat with crackers or cornbread.

    Enjoy...

    My boyfriend loves this Chili, and it is packed with lots of protein.
