    love it... keep recipes coming! also... question for you loyal slow cooker users:
    can you usually let your meals cook on low for as long as 11-12 hours? I usually see 8-10 listed for low but I need it to go a little longer... think it's OK and won't dry out if cooking that long?

    Crock Pot - Roast Beef - Very simple.. and EASY!!!!

    1 pot roast (I use the blade roast cut.... but anything will do)
    1 package of onion soup mix (low sodium)
    1 can of Campbell's mushroom soup (low sodium)

    Place roast in crock. Spoon over the entire roast - the soup. Sprinkle the package of soup mix on top. Put on low for 8 hours.
    Soup will make an amazing gravy too - I pour it into a pot and thicken it with a bit of water / corn starch.... YUM!

    You can also put cut up potatoes, carrots, celery on the bottom of the crock, then place the roast on top... dinner!!!

    Easiest crockpot recipe ever:

    BBQ Pulled Chicken:

    2-3lbs chicken breast trimed (I just go to kroger and get a package)
    1 bottle sweet baby rays

    1. Place chicken in crockpot and cover with water and cook for 6-8 hours on low.
    2. Pull out chicken and shred.
    3. Place chicken back in crock pot with about 1/2 cup of the water from cooking
    4. Pour bottle of BBQ sauce into crock pot and stir.
    5. Cook on high for 30 minutes
    6 Serve!

    It is soooo yummy and low cal :)

    CROCKPOT CHICKEN TACOS

    1lb boneless skinless chicken breast (I just pick up a package of chicken breasts: I think there are 3 breasts in there).
    2 cups mild salsa (Use mild salsa only or it will be too hot).
    2 Tb taco seasoning
    1/2 green bell pepper
    1/2 yellow onion
    Flour tortillas
    And any fixings you want to eat with it


    Place chicken breasts in the crock pot (no need to wash them).
    Pour 2 cups mild salsa on top.
    Sprinkle with taco seasoning
    Add veggies.
    Stir a bit.
    Cook on high 4 hours or low 6 hours ( I like low best).
    Crock pot goes on warm when done so it's okay if you aren't home.

    Before serving shred with a fork.
    Serve with flour tortillas, shredded lettuce, sour cream, fresh cilantro etc...whatever you like!

    Here is the taco seasoning recipe if you want to make your own.
    I just make it and place in a tupperware . Use 2 Tb ONLY of this mixture for the recipe.

    My favorite breakfast. I substitute margarine for the butter, abd I add either an entire apple or a can (10.75 oz) of pumpkin puree to a double batch. This also freezes well!!

    Ingredients

    1 cup steel cut oats
    3 1/2 cups water
    1 cup peeled and chopped apple
    1/2 cup raisins
    2 tablespoons butter
    1 tablespoon ground cinnamon
    2 tablespoons brown sugar
    1 teaspoon vanilla extract

    Directions

    Place the steel cut oats, water, apple, raisins, butter, cinnamon, brown sugar, and vanilla extract into a slow cooker, and stir to combine and dissolve the sugar. Cover the cooker, set to Low, and allow to cook 6 to 7 hours (for firm oats) or 8 hours (for softer texture).
    New recipe my husband and I created yesterday...

    Loaded Baked Potato Soup! Om nom nom.

    8 med. potatoes, diced with skin
    4 cups water
    1 cube chicken bouillon
    5 Tbsp dried onion (or 1 lg onion, finely chopped)
    8 oz - 2% medium cheddar cheese, cubed
    4 oz - 2% colby jack cheese, cubed
    8 oz fat free cream cheese, cubed (ish)
    2 Tbsp Worcestershire Sauce
    1-1/2 cups nonfat milk
    1 Tbsp garlic, minced
    20 oz. extra lean ham, diced, (5% fat)

    Night before - Dice, blanch, and drain potatoes. Dissolve bouillon in water per package instructions and add dried onions to broth. Cube, dice, and mince cheeses, ham, and garlic.

    Morning before work - Throw everything into the crockpot and stir. Set to low for 10-12 hours.

    Come home, stir, and serve with a dollop of sour cream and garnish with chives.

    Sounds really yummy... but I think I will choose a different BBQ sauce. Sweet Baby Ray's is THE BEST FLAVOR... however the calories are like 70/Tbsp and the sugar content is outrageous... There are quite a few other brands that are half that. Every little bit helps;)
