I've seen a few posts in the past but can't seem to find them and Google isn't being too helpful either
I fancy using some sweet potatoes in a bread/muffin/cake but would like some nice ideas
Thanks in advance

Those cupcakes look amazing!
I would suggest looking at allrecipes.com (my fav cooking/baking site lately). They have recipes for baked apple w/ sweet potato stuffing, breads, cakes, souffles....
Another thing you might try is take a favored recipe and substitute some purreed sweet potato and substitute for pumpkin in a recipe or some of the egg/oil content. This egg/oil trick often works with applesauce and bananas, I imagine it would work with sweet potato as well. Can make it slightly more dense though.
Hope this helps!0 -
also broaden your search to pumpkin/other squash recipes and do a 1:1 swap with sweet potatoes?
edit: i like allrecipes too, but two other similar sites that are great are epicurious.com and food52.com

I agree! love allrecipes.com & I use sweet potatoes in place of pumpkin muffin recipes. I also replace oil with applesauce. I make muffins & ad choc chips & my whole family loves them! Havent added my recipe to see the nutrition here yet thoughThose cupcakes look amazing!
