You have all been so kind and helpful with all of this feedback and I really appreciate all of your help! I think I'm going to stick to working up a deficit to make wiggle room for the weekends. I'm going to try to start scheduling times to exercise even though it's going to be hard to fit it in...this will be 100x easier…

Thank you to everyone who replied! I know that increasing activity is going to be the biggest help - it's just hard to do when I have very little free time during the week. I'll try my hardest to fit things in where I can. I've tried a few times to log in my calories on the weekend but then it becomes very disheartening…
